Application of sustainable and efficient technologies in the development of future dairy products

The project is developing an innovative pasteurisation solution based on Pulsed Electric Fields (PEF), promoting the decarbonisation of the agri-food industry by reducing energy consumption, improving process efficiency and producing milk and cheese with a lower environmental impact, in line with ESG principles.

Vision

The use of more sustainable technology for obtaining dairy products with higher nutritional and organoleptic value

NOVOLAC will focus on the adoption of low/moderate intensity Pulsed Electric Fields (PEF) as an energy-efficient solution for microbial inactivation in the processing of goat/cow milk and derivatives for direct consumption and cheese production. With additional benefits in the lactic products produced, namely with greater nutritional and organoleptic value.

Strategic Objectives

In this section, we present the strategic objectives of the project

To contribute to the economic and environmental sustainability of the dairy sector

Promote energy and digital transition across the entire value chain for goat’s and cow’s milk cheese

Promoting the sustainable production of foods derived from goat and cow milk
