This project will run for 36 months and aims to develop Pulsed Electric Fields (PEF) technology at pilot and semi-industrial scale, and to characterise and assess its suitability for producing dairy products with greater nutritional and organoleptic value compared to conventional heat treatment.

Goals

Contribute to the economic and environmental sustainability of the dairy sector, thereby increasing its resilience to climatic and geopolitical factors.

Promote energy and digital transition across the entire value chain for goat’s and cow’s milk cheese, including producers and processing companies.

Promote the production of food products derived from goat’s and cow’s milk that are sustainable, healthy and safe for the country’s citizens, whilst maintaining or improving their nutritional value and their organoleptic and cultural characteristics.
